Suggestions for accompaniments: Chilled water to put out the effects of spontaneous combustion
Ingredients:
Chicken (preferably boneless, definitely skinless) – 1 kg, chopped into medium size pieces
Onion – 3 large. Chopped
Tomatoes – 2 large. Chopped
Potatoes – 3 medium sized. Cut into 4
Ginger-Garlic paste – 3 tsp
Chilli powder -1 tsp
Turmeric powder -1/3 tsp
Corriander -2 Tbsp
Garam masala -3 tsp
Coconut powder -4 Tbsp
Curry leaves – 5-7 leaves
Olive oil – 2-3 Tbsp
Peanut oil – (if available) – 1 Tbsp
Salt – to taste
Preparation:
Add the oil to a deep pan and heat.
Fry coconut, onions and curry leaves till they turn “golden brown”.
At this point throw in the chilli, turmeric and corriander powder … keep stirring and blend in a little water into the mix after a few minutes.
Add in the chicken, tomato, potatoes, garam masala, ginger-garlic paste and salt.
Keep the mixture cooking by adding a little more water.
Once the oil separates from the water, check if the potatoes and chicken are cooked.
Serve with some steamed white rice or Indian Veg Pulao (recipe coming soon)
Tips:
Keep a jar o f water handy… this one’s not for the faint hearted.
