Gazpacho

 

 

Country of Origin: Spain

Starter/Cold Soup

Ingredients:

Tomatoes (mature) – 1kg

Capsicum (preferably red) – 1 small

Garlic – 2 cloves

Onion – 1 small

Cucumber – 1 medium

Vinegar – 2 Tbsps

Virgin olive oil – 4 Tbsps

Salt – 1 tsp

Water – 200ml (Depends on how thick you want the gazpacho)

Method:

Cut all vegetables into pieces that can be put into the blender.

Put all ingredients except oil in the blender and blend for 5 minutes.

Add oil, blend at low speed for 30 seconds.

Add ice cubes and serve!

 

Tips:

Great option to beat the heat.
